Ingredients (Serves 2)
Instant coffee: 2 tablespoons
Hot water: 500 ml
Sugar: 2 tablespoons (adjust to taste)
Powdered gelatin: 10 g
Water (for blooming the gelatin): 2 tablespoons
Instructions
Place 2 tablespoons of water in a bowl and sprinkle the powdered gelatin evenly over it. Let it sit to absorb and soften.
Bring 500 ml of water to a boil in a pot. Remove from heat, then add the instant coffee, sugar, and the softened gelatin. Stir well until completely dissolved.
Pour the mixture into containers. Once it cools to room temperature, cover with plastic wrap and refrigerate for at least 3 hours until set.
When the jelly has firmed, serve with whipped cream, vanilla ice cream, and a sprig of mint if desired.
Tip:
When blooming gelatin, make sure to sprinkle it over the water so it fully absorbs. Add it after turning off the heat-boiling can reduce its gelling effect.
