Yobuko squid in Saga- Japanese Home Cooking and Sweets Class in Tokyo

I drove about an hour from Fukuoka Airport to Saga and enjoyed delicious Yobuko squid.

Yobuko squid is a local specialty of Yobuko Town, Karatsu City, Saga Prefecture, and it is especially famous for ikizukuri (sashimi-style live squid). It is known for its fresh, translucent appearance, springy texture, and natural sweetness.

The squid prepared for sashimi was so fresh it was still moving, making it an unforgettable dining experience.

Features of Yobuko squid

Yobuko is a port town where squid caught in the Genkai Sea is landed, and squid is deeply associated with the town.
The most common variety is swordtip squid, which is often served as ikizukuri in Yobuko.
A classic way to enjoy it is to have the legs served later as tempura, so you can enjoy it in two different styles.

Best season

Swordtip squid is especially popular from spring through autumn in Yobuko, while oval squid is said to be particularly delicious in winter.
That means Yobuko squid can generally be enjoyed throughout the year.

Well-known restaurants

In Yobuko, places such as Fujioka, the Undersea Restaurant Manbo, Kawataro, Osakana-dokoro Genkai, and Ika Douraku are often introduced as well-known spots.
At Fujioka, I had the Yobuko squid course myself. It was an amazing meals.

Sightseeing with squid

If you want to enjoy squid dishes together with sightseeing, combining them with the Yobuko Morning Market or the Nanatsugama area is also popular.
