Ingredients(8 servings)

  • 200 ml water

  • 2 tsp matcha powder

  • 2 tbsp sugar

  • 5 g pearl agar (a jelly base made from seaweed)

Directions

  1. Put the pearl agar, sugar, and matcha powder in a pot and whisk until well mixed.

  2. Slowly add the water while stirring.

  3. Bring to a boil, then simmer for about 1 minute.

  4. Pour the mixture into a bowl and let it cool. The agar will set at room temperature.

  5. When firm, cut the jelly into small pieces and put them in serving glasses. Pour a little syrup over the jelly. Store-bought 黒蜜 (kuromitsu) is a good choice. Add 餅 (mochi) and きな粉 (kinako) if you like. It also goes very well with vanilla ice cream or whipped cream.
