Japanese orange jelly parfait- Japanese Home Cooking and Sweets Class in Tokyo
How about serving a small-sized dessert after the meal?
Ingredients
Orange juice (100%): 400 ml
Powdered gelatin: 5 g or Pearl agar 7g
Water for blooming gelatin: 3 tablespoons (about 50 ml)
Sugar or granulated sugar: 3 tablespoons
Lemon juice 5g
Instructions
Sprinkle the powdered gelatin over the water and let it bloom for about 10 minutes.
Put half of the orange juice into a heatproof bowl and warm it in the microwave.
Add the sugar and the bloomed gelatin to the warmed juice, then stir well until completely dissolved.
Add the remaining orange juice, lemon juice and mix, then pour into cups or containers.
Chill in the refrigerator for 2–3 hours, or until set.
Top with ice cream or whipped cream, garnish with mint, and it’s ready.
Tips
Do not let it boil: If the juice is heated too much, the gelatin’s setting power may weaken.
Variation: Add canned mandarin oranges or fresh fruit pieces to the container before pouring in the jelly for a more colorful and enjoyable texture.
At the end of our Japanese cooking classes, I always provide a small dessert.
