Cherry tomatoes: 1 pack
Rice vinegar: 2 Tbsp
Dashi: 2 Tbsp
Sugar: 1–1.5 Tbsp
Salt: a pinch
Mint: to taste
Blanch cherry tomatoes (remove stems first) briefly in hot water, then shock in ice water for better flavor absorption.
Mix rice vinegar, dashi, sugar, and salt well; add mint last to infuse aroma.
Toss tomatoes into the marinade and chill in the fridge for about 30 minutes for a refreshing appetizer.
Flavor Balance
Dashi gives it a milder, more Japanese-style twist than regular vinegar marinades.
Boost the sugar slightly to mellow the tomatoes' acidity, making it easier to eat endlessly.
