Ajinomamban-zuke is a traditional Japanese dish. It is a main dish that people especially crave during the hot season.

Ingredients
8–10 small horse mackerel
1/2 onion
1/3 carrot
75 ml vinegar
4 tablespoons sugar
2 tablespoons soy sauce
150 ml water
Salt or salt and pepper
Potato starch
Oil for frying
Instructions
Remove the heads, innards, and scales from the fish. Wash and pat them dry.
Slice the onion and carrot into thin strips.
Season the fish with salt, or salt and pepper, then coat with potato starch.
Deep-fry the fish in oil at 160–170°C until cooked through.
Mix the vinegar, sugar, soy sauce, and water to make the nanbanzu sauce.
Put the hot fish into the sauce right away.
Add the vegetables and let it sit for a while so the flavors blend.
