AMAZAKE(Traditional Japanese sweet beverage)-Japanese home cooing class in Tokyo
Amazake is a traditional Japanese sweet beverage made from rice koji or sake lees. Often called a “drinkable IV drip” for its rich nutritional value, it contains glucose, essential amino acids, and B vitamins, which are believed to promote health and beauty.
Basic Ratio
Rice koji amazake uses a ratio of "rice koji : water = 1 : 2-3" as a guideline.
For dried koji, use about 200-300ml water per 100g; for fresh koji, add slightly more water for easier handling.
Preparation Steps
Break up the rice koji by hand to remove lumps.
Pour in water heated to 55-60°C (or hot water) and mix evenly.
Keep at around 55-60°C and incubate for 6-8 hours to allow saccharification.
Insulation Methods
Using a rice cooker's "keep warm" mode with the lid slightly open and a damp cloth on top is a common household method.
